Brookie cups are chocolate chip cookies and brownies baked into individual muffin servings. They are fun to eat and you don’t have to choose cookie or brownie since you get both in one!

 My Deep Dish Chocolate Chip Cookie Skillet Brownie has an outer skillet brownie layer with a deep chocolate chip cookie center. The result is a decadent, gooey dessert.

For the Pillsbury Baking Challenge, Pillsbury asked us to pick a night to go technology free.  For example, no phone (except the camera feature), no TV, no tablets, no computer, etc. I was sent a box of various Pillsbury™ Baking and Frosting Mixes to bake up some goodies for the evening and was asked to document how our evening went.

I was really excited to try out the Pillsbury™ Purely Simple™ line of cookie mixes. I love that they don’t have artificial flavors, colors or preservatives. I was immediately drawn to the cookie mixes and the brownies since those are my absolute favorite desserts. And since I didn’t want to choose, I decided to combine them!

My first idea was to create the Deep Dish Chocolate Chip Cookie Skillet Brownie. But when I was finished, I had leftover brownie mix, which is why I also made Brookie cups with the leftover brownie mix and an additional box of cookie mix.

I did most of the baking earlier in the day so everything would be ready for our evening. I managed to take a few photos before sunset.

We also spent the evening playing various board games. My favorite game is Pandemic because everyone has to work together to win. We have some really competitive people in our family, so this team strategy game helps keep everyone happy.

We chatted and gossiped about various things throughout the evening before then digging into the deep dish chocolate chip cookie skillet brownie.

My box of goodies also came with the Fujifilm Instax Mini 8 Instant Camera, which really kept us entertained. What is it about instant photos? I love having them as keepsakes and now I can make more memories with my own Instax Mini 8.

The kids especially loved the camera and now want one of their own. They took turns taking photos of themselves doing silly things.

We had a really fun evening full of sweets, games and laughter. It was definitely difficult to not be able to look up game rules on the internet or look up the name of a show we were discussing, but we had a nice quality evening chatting, sharing and of course eating!

DEEP DISH CHOCOLATE CHIP COOKIE SKILLET BROWNIE AND BROOKIE CUPS

DIRECTIONS:

DEEP DISH CHOCOLATE CHIP COOKIE SKILLET BROWNIE

  1. Preheat the oven to 350F. Lightly grease the interior of a 9 inch cast iron skillet.
  2. In a large bowl, make brownie batter according to the box instructions using the brownie mix, 2/3 cup oil, 1/4 cup water and 2 large eggs. Set aside.
  3. In a stand mixer, make cookie dough according to box instructions, using the cookie dough mix, butter and egg.
  4. Add 2 cups of brownie batter to your skillet. (Save the rest for the brookie cups). Gather your cookie dough into one giant clump and spread evenly on top of brownie batter, leaving about 1 inch of brownie batter “crust” around the edges of the pan. Sprinkle 1/4 cup chocolate chips across top of cookie dough. Bake for about 30-35 minutes until brownie batter is set and cookie dough is set and turns a light golden brown.
  5. Allow cookie brownie to cool a little before cutting and serving.

BROOKIE CUPS

  1. Preheat oven to 350F.  Lightly grease the interior of a 12-cup muffin pan.
  2. In a stand mixer, make cookie dough according to box instructions, using the cookie dough mix, butter and egg.
  3. Add 2 tbsp of brownie batter (leftover from recipe above) to each muffin mold. Use a 1 tbsp cookie scoop to scoop 2 cookie dough balls into each muffin mold. You have enough for exactly 12 muffins. Sprinkle and press 1 tbsp worth of chocolate chips into the tops of each brookie.
  4. Bake about 20-25 minutes until brownie and cookie layer are both set. Use a spatula to help loosen brookie cups from molds.

  • 2/3 cup vegetable oil
  • 1/4 cup water

  • 1 (17.5 oz) box Pillsbury™ Purely Simple™ Chocolate Chip Cookie Mix
  • 1/2 cup unsalted butter
  • 1 large egg
  • 1/4 cup chocolate chips
  • BROOKIE CUPS
  • 1 1/2 cups of Pillsbury chocolate fudge brownie batter (leftover from recipe above)
  • 1 (17.5 oz) box Pillsbury™ Purely Simple™ Chocolate Chip Cookie Mix
  • 1/2 cup unsalted butter
  • 1 large egg
  • 3/4 cup chocolate chips
